I can see where I can customize/name labels. Boards imported from Trello with tags rather than labels, and they all have names like Tag 0, Tag 1. I can’t see where to rename them. Do I just switch them all over to labels, or is there a place to customize?

When importing from Trello, your tags will import as labels. So you will just need to go to edit mode and change their names, colors, whatever you need. When you click to edit, you will get this panel where you can change all that:
