Somehow, one day a while back, our time fields stopped working. I have poked around, but have not found any changed settings from when they worked. Does anyone have any thoughts or advice to get this feature working again?

I am not entirely sure I understand what you mean by that!
When you click on a date attribute you will have to select a specific date and enter a time that you would want to set (time field) otherwise it will remain empty!
The only autopopulating “date” attributes are static ones - “created at” and “update at” and those cannot be changed! As they are telling you exactly the date and time when the item was created or last updated.
